Knowing that you're witnessing the evolution of a spirit over the years is still one of the best, most exciting aspects of our work. As is knowing how to inflect it through different strengths and facets of its character, like one of the most sensual, intriguing verbs of a rapidly-vanishing language. Yes!!! We're not ashamed to say, this is all part of our everyday work.
So here we are, another bottling of this Speyside malt….it's perhaps not excessive… a borderline malt, a spirit that represents the exception to the rule. Elegantly fruity, but watch out because it's also austere and salty, with a paternal feel. The nose is pungent and intoxicating with a rhythm that's out of time. A rhythm that changes, allowing it to “come to its senses” in the glass; indeed, after a wrong-footed start, it gradually finds its way. A meandering, difficult path to follow, but at the same time full of adrenaline and packed with surprises. There are pronounced woodland scents, smoky first and then more delicate, like a dish secretly laced with a special ingredient. Thyme, rosemary and oregano overlap as if just tossed into a pot that has been simmering away the whole day. On the palate, it tags you and then scampers off, appearing and then vanishing again. In a game of hide-and-seek, you get glimpses of it through a thick summer's fog.
Tones of parched earth and Mediterranean brush evoke lazy days by the sea, enveloping the palate and leaving us longing to jump on the first aeroplane without even knowing the destination.
