Choosing the right moment for bottling is always a mystical quest, a pursuit of balance, harmony and symmetry… if I might say so, a fourth dimension.
It's not easy to tell whether and to what degree a cask can still improve, you need to catch it at the right moment, like a tightrope walker finding his balance just in time, instead of plunging to the ground.
It's this distillery's first encounter with Samaroli, so let's indulge this highland malt and let it attempt to win us over. Soft and creamy on the nose. Enticing bakery aromas. The impression is rather subtle, and yet as mighty as a herd of cattle left to live wild, roaming the prairies of the Great Lakes. After a moment in the glass, delicate citrus notes open up.
It's very exciting because it's multi-faceted and restless. We can expect some changes and developments after a few months in the bottle. On the palate, an agricultural taste of wet grass, first of all, then punchy late fruits, powdered milk and sourdough.
A bakery busy working through the night.
