Caol Ila - (Gaelic for "Sound of Islay" is pronounced Col EELA) was founded in 1846. Since then make whiskey, “malting” ... ageing ... bottling is totally another story. Let's enjoy a barrel with its 32 years of aging with great class teaches us the meaning of "peat" elegant and with poise: it is expressed in silence quietly, slipping away, passing through our nostrils and palate asking forgiveness. He apologizes so much that he knows to be one of the last sons of distillates an era that will never come back ....With great humility and respect we try to describe this Whisky.... medicine and iodine are the predominant aromas that are well integrated in the whole aromatic structure that supports and accompanies it. Tones of herbs, vanilla, leather and licorice under the bottom make its corollary. Remarkable persistence in the mouth where the salinity typical of Islay there conquests without disturbing, actually translating into hints of salted butter and bread crust.
