An island of sprinters, pirates and explorers… Trinidad has always been at the centre of the history of the Caribbean and its seas, but with a quiet presence. This rum, too, is quietly important, timid. Never self-serving, but obliging. We want to imagine sitting on a beach, watching the ebb and flow of the tide, the changing winds, in quiet contemplation of ourselves, the world, the universe and our soul. A classic. We get mossy and earthy scents first of all, then a finish that conjures up the “nave of an old Romanesque church”. The aromas timidly, almost distantly, change direction once again, veering towards vanilla…almost like Italian stracciatella ice cream, liquorice and dried fruit. A complex, complete rum, perhaps it's precisely its shyness that intrigues us most. A taste explosion of myrtle, juniper berry and a buttery sweetness of pollen. The sweet notes develop a roundness and subtlety that takes shape. Chlorophyll tones provide structure.
