We missed it…
Dear Friend, here we are at the eighth performance. Each time we have the chance to see how evolution, ageing and, why not? - patience - reward us with a spirit that's quite simply out of this world. Is it a rum? Who knows, perhaps it's one of a kind. It begins with the usual aromas, but much, much more mature and complete compared to previous versions. Perhaps its sixteen years are beginning to shape it, to prepare it for the next stage of its ageing. Swirling our glass, we detect impetuous, but also rather jumbled, scents. On the palate the impression of disorientation begins to fade, and things become a little clearer. And then it becomes apparent that what seemed strange and confused is simply an unusual bouquet for a rum from the western hemisphere. The enticing nose has the classic tones we're now used to detecting. Waxy, with hints of lacquer. With its medicinal notes and dried fruit, we could describe it as our peaty rum variety. The palate is stung as if by water spray from the oars as we row downstream along a river. A fiery sensation that turns towards vanilla, liquorice, mint and spices like pink pepper and nutmeg.
